Kama and chocolate

Kama is a good example of everyday creativity. Kama is a traditional Estonian finely milled flour mixture from legumes and grains. It is made by first separately steaming all grains, then drying and grinding them up and finally roasting them and mixing them together into kama. The kama powder is a mixture of roasted barley, rye, oat, wheat, pea and bean flour. The ratio of grains depends on many factors: the possibilities, customs, yield, taste preference, etc. The ingredients of kama may have fluctuated here and there, but it was found on almost every farm.

In the early 1960s, Peter-Paul Papp, a sweets technologist in Kalev, came to the idea of making a new treat out of kama, cocoa, milk and sugar. The treat was named Kama chocolate. Simultaneously, a kama and a chocolate, remains in Kalev's production to this day.
